Tomato Avocado Spinach Sandwich {meatless monday}

Great little sandwich for meatless mondays {or meatless days of Lent} The one in the last picture does have cheese but you can use hummus and it's a yummy, filling vegan sandwich!

Need:



tomatoes (I used roma)
avocado (spritz slices with some lemon juice to prevent them from browning right away so you can enjoy this sandwich later)
spinach leaves
bread (I used sourdough)
hummus or cheese

Spread hummus on your bread (if doing this step)
Place cheese slice on bread (if your doing this step)
Add sliced tomatoes, avocado's and spinach
If making it as a panni spray the bread slices with cooking spray
I used our old Foreman grill to make this as a hot sandwich.


Eat right away! or Wrap tightly in plastic wrap and foil and enjoy for a school lunch, or picnic

this picture has provolone cheese instead of hummus
